Low Carb Chow Mein Recipe with Zucchini Noodles

The last two weeks have been so calm. All our deadlines and client campaigns were finished and delivered before Christmas, which always feels so great to click that last “send” button. We made time over our break to catch up to all things needed: sharing mealswith old friends, spending time with family from afar, sleeping-in, and house cleaning. During the holiday time, we truly enjoy being able to just not have to think about anything other than cooking and gathering with friends.Indeed, cooking for family and friends is so different from cooking at the studio for work. We’re free to experiment with recipes, pour glasses of wine and just cook on-the-fly. Wine definitely makes the moment so much for enjoyable. We’re now feeling a little more pleasantly-plump, pants are fitting a little more snug and we’re not ready to get back on our regular meals without all the holiday decadence.

I just made this for dinner and was totally surprised how good it was. Both my husband and myself really liked it. I used sausage cause that’s what I had and grated the carrot cause I’m lazy and added about 1 cup chopped cabbage to the vegetables. Will definitely be making this again as long as my garden keeps giving me zucchini!

FAQs

How do you cook zucchini noodles so they don t get soggy? ›

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

What is chow mein sauce made of? ›

All you need is soy sauce, black vinegar, sugar, oyster sauce, black pepper, and sesame oil. The flavor that is often missing in homemade chow mein is the tanginess. Black Vinegar is less harsh than regular vinegar, which gives the chow mein a subtle hint of tanginess that brings the dish together.

Should you salt zucchini noodles before cooking? ›

Add zucchini noodles. Toss with tongs and let the zucchini cook for just a minute or two. Remove from heat and add to sauce or add some salt and eat as is. Note: Don't salt the zucchini before you saute it; the noodles will release more water and they'll end up limp.

What's the difference between zucchini noodles and zoodles? ›

Zucchini noodles can be made into different shapes, much like regular pasta. The most common way to make zoodles is to run the zucchini through a spiralizer, which makes a spaghetti-sized zoodle. It is best to use a medium zucchini for spiralized zucchini noodles.

How do you know when zucchini noodles are done? ›

A very quick pan sauté.

I gently toss them with the other veggies and/or sauce for about a minute over medium heat, just until they're warmed through. Don't cook them any longer, or they'll get soft and watery.

Why do you soak zucchini before cooking? ›

The main problem that confronts the cook when preparing zucchini is its wateriness. Zucchini is 95 percent water (among vegetables, only lettuce contains more water) and will become soupy if it is just thrown into a hot pan.

Do you need to drain zucchini noodles? ›

It's quite simple to boil a pot of water, toss in your zucchini noodles and cook for one minute. It's similar to cooking frozen veggies on the stovetop. And once your noodles have cooked, drain the noodles in a colander and serve.

Why are my zucchini noodles soggy? ›

Zucchini is nearly all water, so when you go to cook zucchini noodles it releases the water content of the vegetable. And if you overcook them, you'll end up with a watery, mushy pile of zoodles. Here are my favorite ways to cook zoodles on the stove, in the microwave or in the oven.

Are zucchini noodles healthier than pasta? ›

Zucchini is low in fat, sugar, and calories, and high in vitamin C and fiber, making it a great substitute for traditional pasta noodles. Fiber helps to regulate bowels and maintain good digestive health, and vitamin C acts as an antioxidant to protect cells.

Why is my zucchini so slimy when I cook it? ›

Things You Should Know. If you see mold, black spots, browning, yellowing, shriveling, or wrinkling on the skin of your zucchini, it has likely gone bad. A soft, mushy, or slimy texture also indicates spoilage.

How long to salt zucchini to remove moisture? ›

If you do not have kosher salt on hand, use a teaspoon or so of regular table salt. 1. Place zucchini slices in colander and sprinkle with 2 teaspoons salt. Set colander over bowl until about 1/3 cup water drains from zucchini, about 30 minutes.

How do you firm up soggy noodles? ›

Heat the olive oil in a skillet and add your overcooked pasta. Gently sauté over medium heat for a few minutes until the pasta's texture has firmed up. The whole process takes less than 10 minutes and you'll know it is done when the edges of the pasta have started to crisp and light browning has begun.
